Ingredients

1 1/2 c. self-rising flour
1/4 c. whole wheat or graham
2 tsp. baking powder
1/2 tsp. salt
1 Tbsp. sugar
1/2 tsp. Watkins cinnamon
1 c. milk
1 tsp. Watkins double-strength vanilla extract
5 Tbsp. butter or margarine, softened
2 egg yolks
2 egg whites, whipped until peaks form, but not dry
Preparation

Sift first 6 ingredients together in 2-quart bowl.
In separate container add vanilla to milk; stir.
Add liquid ingredients to dry and stir.
Add butter or margarine and egg yolks and stir.
Batter should be lumpy but consistent.
Fold whipped egg whites into batter.
Pour into waffle iron and cook until golden brown to brown.
Yields 7 seven-inch round waffles.
