Fiesta Rice - cooking recipe
Ingredients

1 small onion, chopped
1 clove garlic, finely chopped
1 Tbsp. oil
1 c. long grain rice
2 medium tomatoes, chopped
1 tsp. chili powder
1/2 tsp. salt
1 to 2 Tbsp. green chilies, chopped
1 (10 oz.) can condensed beef broth
Preparation

Combine onion, garlic and
oil
in 2 quart glass casserole. Cover.
Microwave on High 2
to 2 1/2 minutes.
Stir in remaining ingredients;
cover.
Microwave
on
High 10 minutes or until bubbly.
Microwave on
Medium
12 to 15 minutes until rice is tender and liquid
is
absorbed.
Let stand 5 minutes, then fluff with a fork.
