Zucchini Bread - cooking recipe
Ingredients

3 medium zucchini, grated and well drained (2 c.)
3 eggs
1 c. oil
1 1/2 c. sugar
2 tsp. vanilla
2 c. flour
1/4 tsp. baking powder
2 tsp. baking soda
3 tsp. cinnamon
1 tsp. salt
1 c. raisins
1 c. chopped walnuts
Preparation

Beat eggs lightly in large bowl, stir in oil, sugar, zucchini and vanilla.
Sift flour, baking powder, baking soda, cinnamon and salt together.
Stir into egg mixture until well blended.
Stir in raisins and nuts by hand.
Put into 2 well-greased loaf pans. Bake until center springs back when lightly pressed.
Cool in pans or on wire rack 10 minutes and remove from pans.
Bake at 375\u00b0 for 1 hour.
Makes 2 loaves, pan sizes 8 x 5 x 3-inch pans.
