Poor Man'S Lobster - cooking recipe

Ingredients
    4 qt. water
    1/4 c. salt
    2 Tbsp. caraway seed
    2 Tbsp. dill seed
    3 Tbsp. chopped parsley
    3 lb. fish fillets, cleaned, washed and cut into 2 to 3-inch pieces
    melted butter
    lemon juice
Preparation
    In 6-quart kettle, put water, seasonings and parsley.
    Bring to a boil.
    Add fish chunks.
    Simmer gently 10 to 12 minutes, depending on thickness of fish.
    Remove fish with slotted spoon to serving platter.
    Let set a few minutes to firm up.
    Serve with melted butter for dipping.
    Lemon juice may be added to butter.
