Ingredients

1 single pastry crust
1 medium bunch broccoli, chopped (2 c.)
2 to 4 Tbsp. butter or oleo
1 medium onion, chopped
3 Tbsp. nutritional yeast (available in health food store)
4 eggs, beaten
1 1/2 c packed grated Gruyere cheese
1 1/2 c. milk
1/4 tsp. salt
1/8 tsp. nutmeg
1/4 tsp. cayenne
Preparation

Preheat oven to 400\u00b0.
Bake pastry crust for 8 to 10 minutes. Steam broccoli until tender; drain.
Saute onion and butter over medium heat until golden brown.
Add nutritional yeast; mix well. Simmer at low heat for 5 minutes.
Remove from heat and cool slightly.
Place onion mixture on bottom of prebaked crust. Sprinkle with 3/4 grated cheese.
Top with broccoli.
Combine remaining ingredients.
Pour over broccoli.
Bake at 450\u00b0 for 15 minutes.
Reduce heat to 350\u00b0.
Add rest of cheese.
Bake for 30 minutes.
