Onion Casserole - cooking recipe

Ingredients
    4 jumbo onions
    1 stick margarine
    3 eggs
    5 oz. evaporated milk
    1 stack Ritz crackers
    1 1/2 c. shredded Longhorn/Colby cheese, divided
    salt and pepper to taste
    3 Tbsp. margarine
Preparation
    Peel and wash onions.
    Cut into chunks.
    Boil until tender; drain.
    Melt margarine in onions and saute for 3 minutes.
    Set aside.
    Mix milk and eggs; beat well.
    Add onions, 1 cup grated cheese and 25 crumbled crackers.
