Tabouli - cooking recipe

Ingredients
    1 c. dry bulgur wheat
    1 1/2 c. boiling water
    1 1/2 tsp. salt
    1/4 c. fresh lemon or lime juice
    1 heaping tsp. fresh garlic, crushed
    1/2 c. chopped scallions, including green
    1/2 tsp. dried mint
    2 medium tomatoes, diced
    1/4 c. olive oil
    1 c. fresh chopped parsley
Preparation
    Combine bulgur, water and salt in a bowl.
    Cover; let stand 15 to 20 minutes, until bulgur is chewable.
    Add lemon juice, garlic, oil and mint.
    Mix thoroughly.
    Refrigerate 2 to 3 hours.
