Carrot-Fruit Toss - cooking recipe

Ingredients
    2 c. shredded carrot
    1 (15 1/4 oz.) can pineapple chunks, drained
    1 (11 oz.) can mandarin oranges, drained
    1 c. flaked coconut
    1/2 c. raisins
    1 (8 oz.) carton commercial sour cream
    lettuce leaves
Preparation
    Combine the first 5 ingredients in a medium bowl; stir well. Cover and chill 2 to 3 hours.
    Gently stir sour cream into carrot mixture.
    Serve on lettuce leaves.
    Yields 8 servings.
