Red Hot Vegetarian Chili - cooking recipe
Ingredients

2 medium zucchini, chopped
2 medium onions, chopped
4 cloves minced garlic
2 large red peppers, diced
1 (35 oz.) can Italian plum tomatoes, chopped
2 Tbsp. chili powder
1 Tbsp. cumin
1 Tbsp. basil
1 Tbsp. oregano
1 tsp. black pepper
1/2 c. parsley
1 c. kidney beans
1 c. chick peas
1/2 c. fresh dill (optional)
grated cheese or sour cream (for garnish)
Preparation

Saute the onion, zucchini, garlic and red peppers.
Add spices, tomatoes and parsley.
Cook for 30 minutes.
Add kidney beans and dill.
Cook an additional 15 minutes.
Salt to taste. Serve in bowls topped with grated cheese or sour cream.
