Warm Potato Salad - cooking recipe

Ingredients
    5 lb. Potatoes, peeled and boiled, DO NOT cut up.
    1 small Onion, diced
    1/4 c. Oil
    1/2 c. White wine vinegar, may use more if you wish
    1 Tbsp. Water
    5 Slices bacon
    Salt and pepper to taste
    Fresh parsley or chives to garnish
Preparation
    Cook onion and bacon, and place in a serving bowl. Slice the cooked potato and layer over the top. Add vinegar, salt and pepper, mix thoroughly. Add oil slowly you may not need as much. Taste, you may like to add more vinegar. Garnish ans serve.
