Eggplant - cooking recipe
Ingredients

1 medium eggplant, peeled and chopped
1 or 2 hot red peppers, chopped or powdered cayenne or Tabasco sauce (optional)
1 medium onion, diced
1 can tomatoes or 1 pt. home canned
1 tsp. chili powder
salt and pepper to taste
2 or more leftover biscuits
Preparation

Mix eggplant, onion, peppers, salt and pepper in saucepan. Cover with water.
Cook 10 minutes.
Add tomato and chili powder. Simmer until tender.
Add crumbled biscuits, enough to thicken. Stir constantly.
