Chicken And Rice Bake - cooking recipe

Ingredients
    3 boneless, skinless chicken breasts
    1 small onion
    1 c. rice (Uncle Ben's converted, not Minute)
    2 c. water
    2 c. shredded Cheddar cheese
    salt and pepper to taste
Preparation
    Cut chicken into bite size pieces.
    Cut onion into slices, then each slice out in quarters.
    Saute chicken in a little oil.
    When slightly browned, place in greased casserole dish.
    Saute onions in a pan until limp and put in casserole with chicken.
    Add rice, soup, water and half of the cheese.
    Place uncovered in oven set at 350\u00b0.
    Stir every 20 minutes for 1 hour, then stir again and place second cup of cheese on top.
    Bake 20 more minutes or until top cheese is melted and bubbly.
