Light Orange Cheesecake - cooking recipe

Ingredients
    2 envelopes unflavored gelatin
    1 1/2 c. orange juice, divided
    3 strips orange rind
    3/4 c. sugar, divided
    1/8 tsp. salt
    2 eggs, separated
    3 c. cottage cheese, creamed (if you can't find creamed, put regular in the blender)
    1 tsp. vanilla
    1/4 c. graham cracker crumbs
Preparation
    Sprinkle gelatin over 1/2 cup orange juice in a blender. Heat remaining cup of juice to boiling and add to blender.
    Cover and blend at high speed until gelatin dissolves.
    Add orange rind, 1/2 cup sugar, salt, egg yolks, cottage cheese and vanilla.
    Cover and blend until smooth.
    Pour into large bowl; chill until mixture mounds slightly when dropped from a spoon.
