Green Rice - cooking recipe

Ingredients
    2 pkg. frozen cut spinach
    3 c. Uncle Ben's rice
    1 chopped yellow onion
    3 chopped garlic cloves
    1/2 c. chopped celery
    1/2 c. chopped green pepper
    8 chopped scallions
    2 Tbsp. chicken bouillon
    2 Tbsp. chopped parsley
    2 tsp. chopped cilantro
    2 tsp. salt
    2 Tbsp. vegetable oil
    1/2 chopped chili pepper
    1 (4 oz.) can green peas
    Parmesan cheese
Preparation
    Boil spinach in 4 1/2 cups water with bouillon; set aside. Heat the oil in a saucepan over medium heat; add the onion, garlic, celery, green pepper, scallions, chili pepper, 1 teaspoon parsley and 1 teaspoon cilantro.
    Saute until soft, about 5 minutes.
    Add rice and salt; saute for 5 more minutes.
    Add spinach and water, bring to a boil and stir once.
    Reduce heat to low, cover tightly and simmer for 25 minutes.
    Garnish with the rest of cilantro and parsley, green peas and Parmesan cheese.
