Sweet Potato Muffins - cooking recipe

Ingredients
    2/3 c. cooked sweet potatoes
    4 Tbsp. butter
    1/2 c. brown sugar
    1 egg
    3/4 c. all-purpose flour
    2 tsp. baking powder
    1/2 tsp. salt
    1/2 tsp. cinnamon
    1/4 tsp. nutmeg
    1/2 c. milk
    4 Tbsp. pecans, chopped (optional)
    4 Tbsp. raisins, chopped (optional)
Preparation
    Preheat oven to 400\u00b0.
    Grease muffin tins or use cupcake papers.
    Cream sweet potatoes, butter, sugar, egg and salt.
    Sift together flour, baking powder, cinnamon and nutmeg.
    Add alternately with milk and mix well.
    Add chopped pecans and raisins, if desired.
    Bake 25 to 35 minutes, depending on your oven.
    (A toothpick inserted in the middle will tell you if they're done.)
