Tomato-Feta Frittata - cooking recipe
Ingredients

7 eggs
1/2 c. water
1 c. cooked white rice
3/4 c. crumbled Feta cheese
1/2 c. shredded Cheddar cheese
1/2 c. picante sauce
2 Tbsp. chopped fresh cilantro
1/2 tsp. dried oregano leaves, crushed
3 Roma tomatoes, sliced
Preparation

Preheat oven to 400\u00b0.
Heat greased oven-safe skillet in oven for about 5 minutes.
Beat eggs with water.
Add rice, cheeses, picante sauce, cilantro and oregano.
Pour mixture into prepared skillet.
Top with tomatoes.
Bake for 40 minutes or until knife inserted in center comes out clean.
Makes 6 servings.
