Pear Chips - cooking recipe

Ingredients
    10 lb. pears (after peeling and slicing)
    8 lb. sugar
    1 1/2 oz. ginger root (whole)
    3 lemons
    3 oranges
    1 1/2 pt. water
Preparation
    Grind oranges and lemons, using all except seeds.
    Dissolve sugar in water.
    Add all ingredients; cook until pears are clear and syrup thickens.
    Seal in jars while hot.
    Delicious on ice cream.
    Yields 10 pints.
