Zucchini Omelet - cooking recipe

Ingredients
    1 onion, minced
    2 Tbsp. olive oil
    2 Tbsp. butter
    2 medium size zucchini
    salt and pepper
    6 eggs, beaten
    2 Tbsp. minced parsley
    2 Tbsp. grated cheese
Preparation
    Saute onion in butter and oil until soft; do not brown.
    Pare and slice zucchini very thin.
    Add to sauteed onion.
    Season with salt and pepper to taste.
    Cook slowly for 10 minutes, until zucchini is golden brown.
