Cauliflower Salad - cooking recipe

Ingredients
    1 head lettuce, chopped finely
    1 head cauliflower (use top of flowerets), cut into small pieces prior to cooking
    1 lb. bacon, cooked
    1 large onion (3 1/4 c. chopped onion)
    3/4 c. grated cheese
    2 Tbsp. sugar
    2 Tbsp. bacon fat
    2 c. mayo
Preparation
    This is a layered salad.
    Start with lettuce, then cauliflower, then bacon, then onion, then grated cheese.
    Mix sugar and bacon fat and sprinkle on top.
    Then spread mayo on top like icing. Cover and refrigerate overnight.
    Mix just before serving.
