Ingredients

1 c. boiling water
3/4 c. yellow cornmeal
1 Tbsp. dark molasses
1 c. sour or buttermilk
2 eggs
1 1/2 c. whole wheat flour or part white flour
1/2 to 1 tsp. salt
3 tsp. baking powder
1/4 tsp. soda
3 Tbsp. melted shortening
Preparation

Pour boiling water over cornmeal and stir until thick; add molasses and milk.
Beat in eggs.
Add remaining dry ingredients; stir in shortening.
Bake on an ungreased griddle.
Makes 10 cakes.
