Carrot Cookies - cooking recipe

Ingredients
    1 c. shortening or margarine
    1 c. sugar
    1 egg, beaten
    1 c. cooked, mashed carrots
    pinch of salt
    2 c. flour
    1 tsp. baking powder
    1 1/2 tsp. lemon extract or lemon juice
Preparation
    Cream shortening, sugar, egg and carrots; add dry ingredients. Drop from teaspoon onto greased and floured cookie sheet.
    Bake at 350\u00b0 for 15 minutes.
    Make powdered sugar icing, add real orange juice.
    They are soft cookies and keep for about 3 weeks in a closed container.
