Pumpkin Log - cooking recipe
Ingredients

3 eggs
1 c. sugar
3/4 c. canned pumpkin
1 tsp. lemon juice
2/3 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
1/2 c. walnuts, chopped
Preparation

In a mixer bowl, beat eggs for 5 minutes, until light and creamy.
Add sugar gradually.
Stir in pumpkin and lemon juice. In another bowl, sift flour, baking powder, cinnamon, ginger, nutmeg and salt.
Fold into pumpkin mixture.
Spread into jelly roll pan (with waxed paper on) and sprinkle with nuts.
Bake in 375\u00b0 oven for 15 minutes.
Immediately turn out onto linen towel dusted with powdered sugar.
Roll cake with the towel and place on wire rack to cool.
After completely cool, spread with filling. Roll it again.
Wrap in waxed paper and chill.
