Zucchini Bread - cooking recipe

Ingredients
    3 c. plain flour
    1 1/2 tsp. cinnamon
    1 tsp. soda
    1/4 tsp. baking powder
    3 eggs
    2 c. sugar
    1 c. oil
    1 Tbsp. vanilla
    2 c. grated unpeeled raw zucchini
    1/2 to 1 c. nuts, chopped
Preparation
    Preheat oven to 350\u00b0.
    Sift together flour, cinnamon, soda, salt and baking powder; set aside.
    Mix together eggs, sugar, oil and vanilla.
    Gradually add dry ingredients.
    Blend in zucchini and nuts.
    Bake for 1 hour for large loaves or for 40 to 45 minutes for mini-loaves.
    Cool 10 minutes and remove from pans.
    Wrap in Saran Wrap and refrigerate overnight.
    Freezes well.
    Makes 2 large loaves or 6 mini-loaves.
