Pan Roasted Garlic Chicken - cooking recipe

Ingredients
    2 large chicken breasts (with bones)
    2 Tbsp. olive oil
    2 garlic cloves, sliced
    1 1/2 to 2 c. water*
    1/2 c. sliced mushrooms
    salt and pepper to taste
Preparation
    With a cleaver or sharp knife cut each chicken breast into 4 pieces.
    Put aside.
    Slice garlic.
    In large pot or Dutch oven heat olive oil.
    Brown garlic in oil.
    Add chicken and brown well on both sides.
    Add 1 cup of the water and reduce heat to low-medium. Pot roast chicken for about 1 1/2 hours, until fork-tender.
    (Add mushrooms for the last 15 minutes.)
    Salt and pepper to taste. Serve with pan drippings over pasta or rice.
