Onion Soup - cooking recipe
Ingredients

4 to 5 large Bermuda onions
1/4 lb. butter
1/2 tsp. sugar
beef stock (about 5 c.)
1/2 c. dry wine
3/4 lb. Gruyere cheese, grated
Preparation

Saute onions (4-quart pot full) in butter and sugar, stirring constantly until brown (30 minutes or so).
Add beef stock, wine, salt and pepper to taste.
Simmer 20 to 30 minutes.
Pour over toasted croutons and grated Gruyere cheese.
Bake in a 350\u00b0 oven until bubbly and brown.
Use Swiss if Gruyere is unavailable.
