Clam Fritters - cooking recipe
Ingredients

1 pt. clams, chopped and drained*
2 eggs
1/3 c. milk
1 1/3 c. flour
2 tsp. baking powder
salt and pepper to taste
Preparation

Beat eggs until light; add milk.
Stir in flour and baking powder, seasonings and clams.
Drop by tablespoon into pan of fat heated to 375\u00b0 or until 1-inch cube of bread browns in 1 minute. (Dip spoon in hot fat before using.) Fritters should be cooked through, browned on outside in 3 to 5 minutes.
Drain on paper towel.
Result, a light fluffy fritter.
