Midnight Mommy Russian Chocolate Beet Cake - cooking recipe

Ingredients
    2 c. sugar
    4 eggs
    1/3 c. oil
    2 c. grated beets
    3 sq. bittersweet chocolate
    2 1/3 c. flour
    2 tsp. baking soda
    1/2 Tbsp. vanilla
Preparation
    Parboil (do not cook) beets.
    Peel and grate fine.
    Cream sugar and eggs.
    Add oil and grated beets.
    Melt chocolate in double boiler and add.
    Sift flour and baking soda.
    Add slowly to mixture.
    Add vanilla.
