Eggplant Parmigiana - cooking recipe

Ingredients
    1 eggplant, pared and sliced 1/2 inch thick
    1 egg white, beaten lightly with 2 tbsp. of water
    1/2 c. seasoned Italian bread crumbs
    1 jar Marinara sauce
    1 c. shredded Mozzarella cheese
    1 c. parmesan cheese
Preparation
    Reduced fat items can be substituted, also mushrooms can be used.
