Breakfast Raisin Muffins - cooking recipe
Ingredients

1 1/2 c. water
1 c. raisins
1 1/2 c. flour
3/4 c. sugar
1 tsp. ground nutmeg
1 tsp. ground cinnamon
1/4 c. vegetable oil
1 egg, beaten
1 tsp. baking soda
Preparation

Bring water to boil.
Add raisins and return to boil.
Cover, reduce heat, simmer 20 minutes and strain.
Drain; reserve liquid. Add water to measure 1/2 cup, if necessary.
Dissolve soda in liquid.
Combine flour, sugar, nutmeg and cinnamon.
Stir in raisins.
Add to dry ingredients.
Stir well.
Spoon batter into greased muffin pans.
Bake at 350\u00b0 for 20 to 25 minutes.
