Zucchini Bread - cooking recipe
Ingredients

1 c. whole wheat flour
1 c. plain flour
1 1/2 tsp. baking powder
1 tsp. ground cinnamon
1/4 tsp. baking soda
1/4 tsp. salt
3 egg whites
1/2 c. oil
1 1/2 tsp. vanilla
2 c. zucchini, coarsely shredded and lightly packed
Preparation

Preheat oven to 350\u00b0.
Grease 9 x 5 x 3-inch loaf pan.
Mix dry ingredients except sugar.
Beat egg white until frothy.
Add sugar, oil and vanilla.
Continue beating for 3 minutes.
Stir in zucchini; mix lightly.
Add dry ingredients.
Mix just until dry ingredients are moistened.
Pour into loaf pan.
Bake 40 minutes or until toothpick inserted in center comes out clean.
Cool on rack.
Remove from pan after 10 minutes.
To serve, cut into 18 slices about 1/2-inch thick.
Makes
1 loaf, 110 calories per serving.
