Tuna Gumbo - cooking recipe
Ingredients

2 Tbsp. margarine
1 medium onion, chopped
1 medium green pepper, chopped
1 tsp. minced garlic
1 Tbsp. flour
1 can chicken broth
1 can crushed tomatoes (and juice)
1/4 c. parsley
1 bay leaf
1/2 tsp. salt
1/4 tsp. thyme
1 (12 1/2 or 13 oz.) can tuna, drained
10 oz. frozen cut okra or fresh
1 tsp. lemon juice
1 1/2 tsp. Worcestershire sauce
dash of cayenne pepper
3 c. rice, cooked
Preparation

Melt margarine in a large pot.
Add onion, green pepper and garlic. Saute for about 5 minutes. Combine flour and chicken broth.
Mix well. Add to onion mixture, stirring constantly. Add tomatoes and seasonings.
Bring to a boil.
Cover and simmer 30 minutes. Prepare rice according to package directions.
Add tuna and okra to sauce. Simmer for 10 minutes. Stir lemon juice, Worcestershire sauce and cayenne pepper.
Serve over rice.
