Zucchini Relish - cooking recipe

Ingredients
    10 c. grated zucchini (with skin)
    4 c. chopped onions
    5 Tbsp. salt
    2 1/4 c. vinegar
    2 green peppers (bell)
    2 red peppers (bell)
    4 c. sugar
    1 tsp. nutmeg
    1 tsp. dry mustard
    1 tsp. turmeric
    1 tsp. celery seed
    1 tsp. black pepper
Preparation
    Combine zucchini, onions and salt and let stand overnight. Next day, drain the mixture and rinse twice.
    Add remaining ingredients; cook for 30 minutes.
    Seal in hot jars.
    Use a boiling hot water bath for 5 minutes.
    Makes 6 pints.
