Italian Zucchini Casserole - cooking recipe

4 c. shredded zucchini
1 c. chopped onion
1/2 c. diet margarine
1/2 tsp. pepper
2 eggs, well beaten
2 c. shredded low-fat skim Mozzarella cheese
1 (8 count) pkg. crescent rolls
2 tsp. mustard
Preparation

Saute zucchini with onion and margarine in skillet for 10 minutes.
Add pepper; mix well.
Mix eggs and cheese in bowl. Stir in zucchini mixture.
Line 10-inch pie plate or casserole dish with crescent roll dough, pressing edges to seal.
Spread with mustard.
Spoon zucchini mixture into crust.
Bake at 375\u00b0 for 18 to 20 minutes or until knife inserted in center comes out clean.
Yields 8 servings.
