Country Breakfast Or Supper - cooking recipe

Ingredients
    4 c. cubed, cooked potatoes
    1/2 c. chopped green pepper
    2 Tbsp. chopped onion (more, if desired)
    1/3 c. oleo
    salt and pepper
    4 eggs
    1 c. shredded Cheddar cheese
Preparation
    Cook potatoes, green pepper and onion in oleo until lightly browned.
    Season to taste.
    Break eggs over potato mixture.
    Cover and cook on low heat until eggs are done.
    Sprinkle cheese over eggs, cover and cook until cheese melts.
    Makes 4 servings.
