Light Cream Cheese Frosting - cooking recipe

Ingredients
    1/2 c. sugar
    2 Tbsp. pineapple juice
    1 egg white
    1 (8 oz.) pkg. Nuefchatel cheese, softened
    1/2 tsp. grated orange rind
    1/2 tsp. vanilla extract
    1/2 c. nonfat vanilla yogurt
    1 1/2 Tbsp. honey
    1 Tbsp. lemon juice
    1/4 tsp. cinnamon
    2 c. shredded carrots
    1/2 c. raisins
    1/4 c. canned unsweetened crushed pineapple, drained
Preparation
    In a serving bowl, combine yogurt, honey, lemon juice and cinnamon into a smooth dressing.
    Add carrots, raisins and pineapple to dressing and stir gently, but thoroughly, until salad is uniform.
    Cover and chill for a minimum of 15 minutes.
    Toss again before serving and drain liquid, if desired.
