Vegetable Beef Soup - cooking recipe

Ingredients
    1 lb. ground lean beef
    1 Tbsp. salad oil
    3 pt. beef broth or 6 beef bouillon cubes, dissolved in 6 c. boiling water
    4 c. fresh diced tomatoes
    2 c. cubed fresh potatoes
    1 c. grated carrots
    2 c. diced fresh celery
    1 c. fresh snap beans
    1 c. sliced zucchini squash
    1 c. fresh cabbage, shredded
    1/4 c. chopped fresh parsley
    1/4 tsp. ground black pepper
    salt (if needed)
Preparation
    Brown beef in oil in large saucepan.
    Add beef broth, vegetables and seasonings.
    Bring to boiling point.
    Cover and simmer 20 minutes or until vegetables are tender.
    Serve hot. Recipe yields 3 quarts.
