Favorite Holiday Fruit Cake - cooking recipe
Ingredients

3 c. flour
1 tsp. cinnamon
1 tsp. soda
1 tsp. salt
2 c. sugar
1 1/2 c. oil
3 eggs
1 1/2 tsp. vanilla
3/4 c. pecans, chopped
3/4 c. raisins
1 (8 oz.) can crushed pineapple in heavy syrup (do not drain)
1 (8 oz.) jar maraschino cherries, halved (do not drain)
3 bananas, diced
3/4 c. coconut
2 apples, peeled and diced
Preparation

Sift first 4 ingredients together into a large bowl.
Stir sugar into above mixture with a large spoon.
(Do not use an electric mixer with this recipe; a large spoon is sufficient.) Stir in oil, eggs, vanilla and pineapple with spoon.
Stir in remaining ingredients.
Mix well.
Use floured and greased Bundt pan(s).
Sufficient mix for 1 large Bundt pan or 2 small (6 cup capacity) Bundt pans.
Bake at 350\u00b0 for approximately 50 to 60 minutes.
Cake may crack on top when done.
Test for doneness with sharp knife.
Serve warm with butter or whipped cream.
Cream cheese frosting can be used on this cake, but it is an excellent cake without frosting.
