Squash Patties - cooking recipe

Ingredients
    6 to 10 yellow squash, grated
    1 medium onion
    1 1/2 Tbsp. salt
    1 c. self-rising flour
    1/2 c. cornmeal
    black pepper to taste
    1 egg
    1 c. grated Cheddar cheese (optional)
Preparation
    Place squash in colander and sprinkle with salt; let set over sink until all moisture is gone.
    Add flour, cornmeal, black pepper, cheese and egg.
    Mix together.
    Form into patties and fry. Makes 8 servings.
