Zucchini Alfredo - cooking recipe

Ingredients
    1 large zucchini
    2 Tbsp. olive oil
    1/4 c. butter
    3/4 c. heavy cream
    1 clove garlic, crushed
    Parmesan cheese
    fresh parsley, chopped
    salt and pepper to taste
Preparation
    Using a potato or vegetable peeler, peel a large zucchini, then cut in half; scoop out the seeds. Using the peeler, continue cutting the zucchini in ribbons, then saute in olive oil and your choice of seasonings.
