Spinach, Rice And Bell Pepper Salad - cooking recipe

Ingredients
    1/2 red bell pepper, cut into thin strips (about 2/3 c.)
    1/2 yellow bell pepper, cut into thin strips (about 2/3 c.)
    1/4 c. currants or raisins
    1/4 c. sliced green onions
    2 Tbsp. shelled sunflower seeds
    1/2 c. prepared light olive oil vinaigrette dressing
    2 c. cooked brown or white rice, cooled
    1 c. chopped fresh spinach or Green Giant frozen cut leaf spinach (from 16 oz. pkg.), thawed and well drained
Preparation
    In medium bowl, combine all ingredients; toss lightly.
    Cover and refrigerate until serving time.
    Makes 8 (1/2 cup) servings.
