Sheet Carrot Cake - cooking recipe

2 c. sugar
1 1/2 c. vegetable oil
1 Tbsp. cinnamon
1/2 tsp. ground ginger
4 eggs
2 Tbsp. vanilla
1 tsp. salt
3 c. grated carrots
2 c. flour
1 c. walnuts or pecans (optional)
8 oz. cream cheese
1 1/2 sticks butter
2 c. powdered sugar
Preparation

Combine sugar, oil, spices, eggs, vanilla, salt, carrots and flour and beat until mixed.
Stir in nuts.
Pour mixture into greased and floured pan, 12 x 7 1/2-inch (approximately).
Bake at 350\u00b0 for 30 minutes.
Test with toothpick to check whether cooked. (Moisture content varies according to carrots.)
