Sweet Potato Filled Orange Shells - cooking recipe
Ingredients

4 fresh oranges
1 (18 oz.) can sweet potatoes
1/4 c. margarine, softened
1/4 c. brown sugar
1/4 tsp. ginger
Preparation

Cut oranges in 1/2 crosswise.
With grapefruit knife, remove pulp from shell.
Arrange shells on glass serving tray and set aside.
Remove membrane from orange sections.
Mash sweet potatoes until smooth.
Beat in margarine, brown sugar and ginger.
Fold in orange sections.
Spoon mixture into shells, topping each with a little brown sugar and cinnamon.
Microwave on High for 4 to 5 minutes.
Yields 8 servings.
