Ingredients

1 stick oleo
1/4 c. granulated sugar
1/2 c. brown sugar
1/2 c. drained crushed pineapple
1/2 c. chopped nuts (pecans)
1 3/4 c. flour, sifted
1 egg
1/2 tsp. baking powder
1/2 tsp. soda
1/4 tsp. salt
1 tsp. vanilla
1/4 to 1/2 c. coconut (optional)
Preparation

Cream oleo and sugars.
Blend in egg, pineapple and vanilla. Sift flour with other dry ingredients. Add to cream mixture and mix well.
Stir in pecans and coconuts, if desired. Drop by rounded teaspoonfuls on greased cookie sheets.
Bake at 400\u00b0 for 8 to 10 minutes or until done.
