Banana Cookies - cooking recipe

Ingredients
    2 1/4 c. flour
    2 1/2 tsp. baking powder
    1/2 tsp. salt
    2/3 c. shortening
    1 c. sugar
    2 eggs
    1 tsp. vanilla
    1 c. ripe bananas, mashed (2 to 3 bananas)
    optional: cinnamon, sugar, coconut and chopped nuts
Preparation
    Sift together flour, baking powder and salt.
    Cream shortening until soft, gradually beat in sugar until light and fluffy.
    Beat in eggs and vanilla.
    Add flour mixture alternately with mashed bananas.
    Blend well after each addition.
    Drop by tablespoons onto ungreased cookie sheet.
    Sprinkle tops with cinnamon, sugar, chopped nuts or coconut.
    Bake at 375\u00b0 for 12 minutes.
    Cool on rack.
    Makes approximately 3 dozen.
