Low-Fat Jambalaya - cooking recipe

Ingredients
    1 1/2 lb. chicken breasts, cut into strips
    1/2 tsp. salt
    1/2 tsp. black pepper
    1 Tbsp. vegetable oil
    3/4 lb. smoked turkey sausage, cut into 1/4-inch slices
    2 onions, chopped
    1 large green pepper, chopped
    1 c. celery, chopped
    1 minced garlic clove
    2 c. uncooked rice
    1/4 to 1/2 tsp. cayenne pepper
    2 1/2 c. chicken broth
    1 c. sliced green onions
    1 tomato, chopped
Preparation
    Season chicken with salt and pepper.
    Cook with oil, over high heat, in a Dutch oven.
    Add the sausage and cook 2 to 3 minutes. Remove chicken and sausage; set aside.
