Ingredients

1 1/2 lb. cooked, sliced warm potatoes
2 Tbsp. finely minced shallots or onions
salt and pepper to taste
1/4 c. potato water or chicken stock
1 1/2 Tbsp. wine vinegar
2 to 3 Tbsp. chopped parsley
2 to 3 Tbsp. olive oil
Preparation

Toss all ingredients lightly.
If made ahead, you can use dried parsley and reheat in microwave.
