Sweet Potato Salad - cooking recipe

Ingredients
    3 lb. sweet potatoes, cooked, peeled and cubed
    1/2 c. finely chopped onion
    1 c. green peppers
    1/4 tsp. pepper
    1 1/2 tsp. salt (optional)
    1/2 c. light mayonnaise
    dash of hot pepper sauce
Preparation
    Combine first 5 ingredients in a large bowl. Stir in mayonnaise and hot pepper sauce.
    Mix well.
    Cover and refrigerate at least 1 hour before serving.
    Yields 10 servings.
    Contains 217 calories.
    Diabetic Exchange: 2 breads and 1 1/2 fat.
