Chicken Curry Casserole - cooking recipe

Ingredients
    1 1/2 lb. chicken breasts, cooked and cut in bite-size pieces
    2 c. white rice, uncooked
    12 to 16 oz. frozen peas
    2 cans cream of chicken soup
    1 c. mayonnaise (regular or no-fat)
    2 Tbsp. curry powder
    1 to 1 1/2 c. shredded cheddar
Preparation
    Cook rice according to directions; spread in bottom of large baking dish. Cover with frozen peas.
    In separate bowl, combine soups, mayonnaise and curry powder; then spread 1/2 this mixture over peas.
    Next, place chicken pieces in dish.
    Spread remaining mixture over top.
    Sprinkle cheese and bake in 375\u00b0 oven until heated through, about 45 minutes to 1 hour.
    Great dish to make ahead of time and freeze.
    Serves 8.
