Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. oil
    1 c. brown sugar
    1 c. granulated sugar
    2 c. coarsely grated zucchini
    3 c. sifted flour (can substitute 1 c. whole wheat)
    1/4 tsp. baking powder
    2 tsp. soda
    1 tsp. salt
    2 to 3 tsp. cinnamon
    pinch of nutmeg
    1 Tbsp. vanilla
    1/2 to 1 c. chopped nuts (optional)
    1/2 c. raisins (optional)
Preparation
    Beat eggs, sugars, oil and zucchini.
    Add dry ingredients; mix well. Add vanilla and nuts.
    Pour into 2 greased and lightly floured pans.
    Bake at 350\u00b0 for 40 minutes. Test for doneness with a toothpick. Stores well in freezer for several months.
