French Fried Zucchini - cooking recipe

Ingredients
    vegetable oil
    3/4 c. buttermilk baking mix
    1/2 tsp. salt
    3 medium zucchini, cut into 1/2-inch slices
    1 egg, slightly beaten
Preparation
    Heat 1 inch of oil in 10-inch skillet to 375\u00b0.
    Mix baking mix and salt.
    Dip zucchini into egg; coat with baking mixture.
    Fry about 1/3 of the zucchini at a time, turning if necessary until golden brown, about 2 minutes.
    Makes 3 or 4 servings.
